Consumers want access to locally-grown, farm-fresh produce, and therefore the ‘buy local’ food movement is gaining popularity. Food for the average American meal travels an estimated 1,500 miles from the farm gate to someone’s plate. As fuel prices rise and the environmental impact of fossil fuel use becomes more apparent, it makes sense to look for ways to transport food shorter distances. Food that travels a short distance from field-to-fork is more likely to be fresh. Restaurant chefs are also discovering that they can prepare better dishes with food if their raw materials – the fruits, vegetables, meats, and dairy products – are fresh and of high quality.
People are beginning to learn how much they appreciate having a direct connection to farmers and farm life. Consumers like to know where their food comes from and that the farmers who grew it have a deep respect for their land and the environment.
