Storage Setpoints: Predicting Long-Term Potato Storage

This storage season has been particularly interesting to me as a storage manager. The age of the crop has been a concern. Processing potatoes coming through the lab have had internal defects, odd shapes and highly variable specific gravity within individual fields. In some cases tubers have started breaking dormancy requiring a second application of sprout inhibitors.
