Pierogis are classic Polish dumplings typically filled with creamy potatoes and cheese, and often topped with sour cream and caramelized onions. In this recipe, we’ve taken all the elements of that classic pierogi and simplified them!

This dish makes a delicious meal when served with a side of roasted Brussels sprouts or simple steamed green beans.

Tip: Do you have some leftover mashed potatoes in the refrigerator? They will work perfectly in this recipe. Simply warm them well first.

Tip #2: You can assemble this casserole in advance. Simply keep it covered tightly in the fridge and add 20 to 30 minutes to the cooking time when you’re ready to bake.
